Pumpkin Oat Energy Balls

1 cup old fashioned oats/quick oats

½ 15oz can pumpkin puree

1 tbsp chia seeds

1/2 cup Peanut butter/Almond butter

¼ cup Maple syrup/ Agave

½ tsp Cinnamon

½ tsp vanilla extract

*optional add-in ingredients: chocolate chips, flax seeds, nutmeg.


  1. Combine all ingredients together in a mixing bowl, until thoroughly mixed.
  2. Wet hands under warm water and roll dough into 1” in diameter balls
  3. Place onto baking sheet and place into fridge for ~40 min
  4. Store in an air-tight container and keep refrigerated up to 1 week
