Recipe for Cal Poly Dining’s October Superfood.
Yield: ~15 energy balls

Ingredients:
1 cup old fashioned oats/quick oats
½ 15oz can pumpkin puree
1 tbsp chia seeds
1/2 cup Peanut butter/Almond butter
¼ cup Maple syrup/ Agave
½ tsp Cinnamon
½ tsp vanilla extract
*optional add-in ingredients: chocolate chips, flax seeds, nutmeg.
Instructions:
- Combine all ingredients together in a mixing bowl, until thoroughly mixed.
- Wet hands under warm water and roll dough into 1” in diameter balls
- Place onto baking sheet and place into fridge for ~40 min
- Store in an air-tight container and keep refrigerated up to 1 week
