Cal Poly’s very own Executive Chef Kline has created a one-of-a-kind burger that is currently part of the James Beard Blended Burger Project : Campus Edition. What is that you might ask? It’s a competition among college campuses where everyone can vote for their school’s creative, healthy and sustainable burger.
Inside this juicy, new menu item at Campus Dining is a blend of 75 percent buffalo with 25 percent portobello mushrooms and a mixture of fresh sage. Top that with agave caramelized onions, arugula, Havarti cheese and fresh sliced tomatoes all between a locally baked whole wheat oat and sesame bun and you have yourself a Mushroom Buffalo Burger!
Not only is this tasty bite packed with flavor, but the sustainably sourced buffalo is higher in protein and lower in fat than beef.
